The founder of Vieni Estates brings his passion for wine from Italy and combines it with his love for this distinctly Canadian wine region, and particularly the unique attributes of the rolling hills of the Vinemount Ridge.  Master winemaker Mauro Salvador takes the best of the many varietals grown on the estate to produce a broad and compelling range of still wines, ice wines and sparkling wines crafted in the Charmat method (Metodo Italiano). Each offering is crafted to reflect the best of the terroir, the varietal, and the winemaker’s skills.

This wine has everything
a proper Riesling should - straw yellow, with greenish reflections, elegant, aromatic, fruity and floral with a pronounced note of dandelion and candy. Light, dry, culminating in a fruity finish.

Vieni produces its sparkling wine using the Charmat-Martinotti method or Metodo Italiano. In this process the secondary fermentation that produces the bubbles occurs in autoclaves, which are large sealed stainless steel pressure tanks. The autoclaves are equipped with motorized agitators inside to simulate the process of riddling. The Charmat method guarantees greater control over the quality consistency of the end-product and is especially preferred when processing aromatic grapes such as Riesling & Pinot Noir where freshness & intensity of aromas are desirable traits.

Winemaker’s Notes
Beautifully pale peachypink, fruity and fresh with hints of wild strawberries, apples and bread crust, creamy and dry, structured and well balanced with a finish of forest herbs.

Graspa or Grappa?

Graspa is one of the original names given to spirits distilled from fermented
pomace, left after the pressing of grapes during the wine making process.
Today only Italian producers can use the name “Grappa”.

Vieni produces its Graspa using the discontinuous process in a custom-built
small batch 5000 liter copper still, using specially selected fresh pomace and
adhering to strict methods resulting from fifteen centuries of Italian traditions. Art, craft, tradition and technology working in harmony to bring out the exceptional character of each distillate. Salute.
